Looking to use the left over brine from your Sriracha Sauce here is the perfect dish.  The brine brings a subtle warmth to the palate of this dish.  Don’t have any brine no issue this recipe can still pack a punch!

Chilli Prawn Risotto

This sensational prawn risotto has a hint of chilli from the chilli brine stock that will give a nice warming sensation without over powering the dish.

  • 180 mls Chilli Brine no brine use 2tsp of sriracha sauce in 180 mls water
  • 1 tbsp Tomato Paste
  • 1 tin Diced Tomatoes
  • 2 tsp Dried Oregano
  • 1 tsp Vegetable Stock Powder
  • 1 Lemon Grated Rind
  • 1 tbsp Olive Oil
  • 2 French Shallots
  • 2 cloves Garlic
  • 300 grams Arborio Rice
  • 300 grams Green Prawns Peeled
  • 100 grams Green Beans
  • 100 grams Butter
  • 50 grams Grated Parmesan
  • 2-4 tsp Sriracha Sauce to taste


  • Thinly slice the onions and crush the garlic. Add the olive oil to a heavy based saucepan and cook on a low heat until caramelised.
  • Combine in a saucepan the brine, tomato paste, tinned tomatoes, oregano, lemon rind and stock powder. Bring to the boil and allow to simmer.
  • Add the rice to the onions and garlic and coat in the oil.
  • Add a ladle of the hot stock to your pan and continually stir.
  • As each ladle of stock is absorbed add a further ladle of stock to the rice. Stirring for 10 minutes.
  • After 10 minutes add the prawns and beans to the rice and continue to ladle stock and stir for another 5 minutes. At this time check your rice is cooked through and no longer has any crunch. If not yet cooked continue to add stock and cook for a further few minutes.
  • Remove from heat and stir through the butter and parmesan. Then add the Sriracha sauce to taste.
